Cut up head of cauliflower, toss with olive oil and roast for 10-15 minutes at 375 degrees. Remove cauliflower, sprinkle with parmesan and return to oven to just brown the cheese. Prepare Bertolli pasta as directed, but add diced tomato and asparagus spears (cut into two inch sections.)
I add the cauliflower in before serving. This will feed a healthy portion of 4.
