Zucchini Stuffing Casserole

Ingredients
4 medium zucchini3/4 cup shredded carrot1/2 cup chopped onion6 tbsp I Can't Believe It's Not Butter2 1/4 cups Stuffing Cubes1 can condensed Cream of Mushroom soup1/2 cup light sour cream
Directions
Steam zucchini.
Melt 4 tablespoons of butter substitute in sauce pan. Saute garlic, onion and carrot until tender. Remove from heat, stir in sour cream, soup and 1 1/2 cups of stuffing cubes. Gently stir in zucchini. Turn into 1 1/2 quart casserole dish. Melt remaining butter substitute. Stir in remaining stuffing cubes, top casserole.
Bake @ 350 degrees for 40 minutes.
