Paul's 3 Bean Salad

Ingredients
1 15 oz. can broad beans1 15 oz. can kidney beans1 15 oz can black beans1 12 oz can corn1 medium onion chopped
Directions
Open beans. drain and rinse.
Open corn, drain but do not rinse.
Mince onion.
Mix together.
Eat alone or mix with couscous.

Makes 8-10 half-cup servings

    This was surprisingly good. I was afraid of using the corn juice as the dressing, but it worked well. My daughter and I agreed that it needs some cilantro. We're going to add that tonight to the leftovers. - 4/20/09
