Orange Marmalade fish

Ingredients
1 pound of fish--salmon, cod, whiting, 1/8 cup slivered almonds1 teaspoon pepper1/4 cup orange marmalade1 tablespoon molasses1 large orange sliced
Directions
Line 9X9 pan with foil and then spray with pan spray. Place fish in the pan. Season with the pepper and place the slivered almonds over the top. Mix orange marmalade and molasses together (if too thick add a little of tap water) and pour on top of the fish. Place the sliced oranges over the top of the fish. Cover with foil and bake in a moderate oven until fish is tender.

    I made this with cod. I added a little Marsala to the molasses and marmalade. Seems there is always a half used jar of orange marmalade in the fridge. I also sprinkled more sliced almonds on top of the orange slices. I love using non-stick foil. You can rinse,refrigerate and reuse it. - 6/23/11

    It was good, considering we don't eat much fish. For the pepper, I substituted red pepper flakes and lemon pepper, 1/2 tsp. each. Also, I wrapped fish in foil and put it on the grill and it came out fine. - 7/31/09
