Shrimp Mozambique

Ingredients
1 to 1 1/2 lbs of raw shrimp-(shell on holds flavor better)1/4 cup light olive oil1 oz of light rum1 tbsp parsley3 cloves chopped garlic1 tsp oregano1 tbsp red crushed pepper1/4 cup white cooking winesalt and pepper 2 cups white rice (1/2 cup per sev.)
Directions
Blend all ingredients except shrimp in large skillet over med/low heat. Add shrimp and cook slowly until they are pink. Boil rice or pasta while shrimp is cooking. Be careful not to over cook shrimp. Serve over white rice or pasta.

    I thought this was great. Had a nice kick to it. There wasn't much sauce left over after cooking though, which was the only part that I didn't like about it. It tasted great! - 7/6/09

    Very good but VERY spicy!!! Next time I will probably cut the red pepper in half. Other than spiciness, this was a delicious dinner over white rice. - 3/7/08
