Colorful sweet potato burritos

Sweet potato, 3 cups cubed*President's Choice lowfat refried beans, 2 cup *Kraft 2% Shredded Cheddar Cheese, 1.5 cup Yellow Sweet Corn, Frozen, 1 cup kernels Salsa, .5 cup- 1 cupcasa mendosa tortillas- whole wheat, 10 serving
Pre heat oven to 350 degrees F
1.peel and cut sweet potato into 1.2 inch cubes
2. in a large pot boil water
3. add potato and steam for about 8 minutes
4. top 10 tortillas with
refried beans
cheddar cheese
cooked sweet potato
corn
salsa
5. Roll up burrito-style and place seam side down on a baking sheet
6. Bake for 15 min or until cheese melts and burritos are warmed through.
This makes a great meal all by itself
