Tuna Stuffed Tomatoes

Ingredients
4 Medium Ripe tomatoes12 oz Tuna packed in water4 tsp light Miracle Whip4 tsp brown mustard (I love Boetje's)4 tsp pickle relish1/4 cup celery, diced1/4 cup onion, diced1/4 cup bell pepper (I like red, but whatever color)
Directions
Cut the tops off the tomatoes and gut the insides.

Dice the celery, onions and peppers. Mix the diced vegetables with the tuna, Miracle Whip, mustard and relish.

Scoop the tuna mixture evenly into each hollowed tomato.

Serving size: 1 stuffed tomato

Also good if you add 4 oz cheese, diced very finely and mixed in. That adds (for low fat, Sargento colby jack cheese) 50 calories, 4 g fat, 140 mg sodium.

Great served with whole-wheat crackers topped with low-fat cheese or peanut butter.
