Brunch Peanut Butter Muffins

2 cup flour2 T. sugar1 T. baking powder1/4 t. salt2 egg whites1 cup 1% milk1/3 cup Crisco vegetable oilTOPPING:3 T. sugar3 T. flour3 T. crunchy peanut butter
Heat oven to 400 degrees. Prepare 12 cup muffin tin.
Stir together flour, sugar, bk. powder, and salt in medium bowl. Combine egg whites, milk and oil in small bowl. Combine mixtures until dry ingredients are just moistened.
Divide batter eveny among muffin cups.
TOPPING: Combine sugar, flour, and peanut butter until mixture is crumbly. Divide topping over muffins. Lighly stir in with knife.
Bake 18 to 23 minutes until browned. Cool in pan 5 minutes.
Makes 12 regular muffins or 24 mini-muffins
