Salsa Salad for One

Romaine Lettuce - 3 cups (or sub in your favourite salad greens)Salsa - . 1/4 cup (or to taste)Cilantro (optional) 1 tbspParsely (optional) 1 tbspPinto Beans (drained and rinsed) - 1/2 Cup (or sub in your favourite beans... black beans are also good)Carrots (shredded) - 1/4 CupCorn Kernels - 1/4 cup
Combine all the veggies (except the corn) and toss with the parsely and cilantro.
Mix together the pinto beans, corn, salsa and top the salad.
Makes a nice quick lunch for one!
