Cucumbers with yogurt sauce

3/4 cup cider vinegar1/4 cup granulated sugar1/4 cup fresh chopped parsley4 medium scallions, chopped 3 cucumbers (with or without peel)For sauce: 1/2 cup plain nonfat yogurt1 tsp. granulated sugar1/2 tsp. dry mustard
Combine vinegar, 1/4 cup sugar, parsley and scallions in a bowl. Stir well. Cover and refrigerate until cool.
Cut cucumbers in half lengthwise and scrape out seeds with a spoon. Cut cucumbers crosswise into thin half-moon slices. Add cucumbers to marinade. Cover and refrigerate 1 to 2 hours. Drain and serve with optional yogurt sauce.
For sauce, combine yogurt, 1 tsp sugar and mustard in a bowl and stir well. Toss with drained cucumbers.
