Spicy Soba Noodle Soup

1/2 block extra firm tofu (diced)1 bundle soba noodles1 tbsp seasme oil1/4 cup red miso paste4 cups chicken stock1 cup mushrooms, sliced4 oz. kimchi1 cup chopped green onions1 tsp. (or more to taste) Sriracha sauce
Makes 2 servings
Bring chicken stock to a boil. Add soba noodles and miso paste.
While the noodles are boiling, pan fry the diced tofu in the seasme oil. Add the sriracha sauce toward the end.
Add the mushrooms to the soup. Simmer for about 5 minutes. Add the tofu and simmer for 5 more minutes. Add the chopped green onions at the end.
