Herbed cottage cheese baked potato

Ingredients
4 large potatoes 200g blanched chopped spinach leaves1 cup low fat cottage cheese2 tbsp chopped mixed fresh herbs1/2 cup rinsed, chopped sundried capsicum (see note)125g diced mushrooms
Directions
1 Preheat oven to 200 c (400 f).
2. Wash the potatoes but do not peel. Dry potato
3. Bake the potato for 1 hour, or until cooked through.
Place the spinach, cottage cheese, mixed herbs, sundried capsicum and mushrooms in a bowl and mix together well. Divide among the baked potato and serve.
