Ingredients
1 Egg Plant 1 Egg beaten1/2 tea. sp. salt1/4 tea sp. pepperGround Saltine CrackersVeg. Oil for Frying
Directions
Rinse Egg plant,
Pare & Slice Egg plant. Dip slices into Egg mixed with the salt & pepper, then Dip into the cracker meal. Cover slices well.....Fry to a deep rich brown.
Drain on paper towel....Enjoy !!
Corn Starch or Flour or corn meal can be used in place of Cracker Meal.

    My Spanish mother in law makes this all the time, She leaves the skin off for my little boys as he doesn't like it. They smell great and are best eaten hot. Also it is traditional in Spain to eat them with very dark honey or malases. - 10/6/10
