Apple Cinnamon Bran Muffins

Ingredients
3 c oat bran2 c fat free plain yogurt2 c whole wheat flour1 c packed brown sugar2 t baking sods2 t cinnamon2 t vanilla extract4 egg whites2 apples, grated1 tart apple, peeled and sliced into 24 slices
Directions
Combine bran and yogurt in a small bowl and let sit for 10 minutes. Preheat oven to 350. Lightly grease muffin pans. In a large bowl, mix together flour, brown sugar, baking soda, cinnamon. Stir in bran mixture, egg whites, vanilla. Mixture will be dry and dense. Fold in grated apple. Divide batter into 24 muffin cups. Press one apple slice into top of each muffin before baking. Bake for 16-18 minutes or until toothpick inserted into the center comes out clean. Allow to cool for 5 minutes in pan, then remove from pan and allow to cool completely on colling rack.
