Low-carb Vegetarian Minestrone

2 cups of chopped, boiled kale1 cup sliced zucchini1 cup diced celery and leaves1 cup cooked kidney beans1 cup crushed tomatoesbasiloreganobay leafonion powdergarlic powder
Cook dry, soaked kidney beans if needed, and add a bay leaf.
Saute zucchini, kale, and celery briefly, and then add the crushed tomatoes and spices to taste until fully heated through.
Add tomato and veggie mixture to kidney beans in 2 cups of water (or add 2 cups of water and canned/cooked kidney beans to the mixture)
Let simmer for 10-20min.
