Turkey Chili with Black Beans

1 lb. turkey1 1/4 cup finely chopped onion3 tsp. minced garlic1 Tbsp chili powder1 tsp. oregano1 tsp. ground cumin1/2 tsp. salt1/4 tsp. ground red pepper2 1/4 cups water6 whole pitted prunes chopped2 -15 oz can black beans, undrainedChili chipotle to taste (optional)Nonstick cooking spray
Brown turkey in a large nonstick skillet over medium-high heat, stirring to crumble. Drain in a colander. Coat skillet with nonstick spray and place over medium heat. Add onion and garlic and saute for seven minutes. Add chili powder, oregano, cumin, salt and red pepper and cook for one minute. Return turkey to skillet; stir in water, prunes and beans. Add chipotle. Bring to a boil; reduce heat and simmer, uncovered for 5 minutes. Serve over rice.
