Ingredients
1 package of frozen spinach (thawed and drained)1 cup of Egg Beaters1/2 cup of skim milk6 fresh mushrooms slicedcheese optional, remember to add the calories to your daily stats.Your choice of seasonings: cayenne pepper, salt, pepper, garlic powder, etc.
Directions
This recipe make one serving for me, however you might not eat the quantities that I do and you may find that this serves 2 or 3. That would be easy especially if you served toast, or muffin with it. I choose to omit the empty calories of the bread and I get to enjoy the flavors and quantities of the spinach, eggs and spices. Remember, you may chose to add cheese but remember to add the calories to your stats for the day. To me, this is a very filling, satisfying meal. Have fun cooking and eating healthy!
