6 oz lasagna noodles (9 noodles)2-26 oz can Hunt's spaghetti sauce4 oz can sliced mushrooms1 cup chopped white onion1.5 lbs 93% ground beef/turkey1 cup chopped celery2.25 oz sliced black olives1 cup grated carrots2 cup low fat cottage cheese1 cup skim mozzarella, shredded1/2 cup skim mozzarella, shredded1/4 cup grated parmesan1 tsp cilantro1 jumbo egg1/8 tsp ground peppercorns
Preheat oven to 350 degrees. Cook beef and drain well. Boil noodles until done, about 15 minutes. Saute veggies. Add sauce and veggies to meat and simmer. Mix parmesan, cottage cheese, 1 cup mozzarella, cilantro, egg and pepper well. Layer sauce, noodles, and cheese, repeating until gone. Top with remaining sauce and 1/2 cup cheese.
