Mixed-Bean Masala

1 can (19 oz) 6-Bean Blend1 tbsp sesame oil1 carrot1/2 onion3 cloves garlic3/4 cups water2-3 tsp (or to taste) chana masala spice mix
1. Dice the carrot, onion, and garlic and fry in sesame oil just until onions are translucent. (You can add or substitute other vegetables for the carrot, such as peas or brocolli, but the nutritional info is calculated for carrots.)
2. Add water, 6-Bean Blend, and masala mix. Simmer 30-45 minutes on medium heat or until water is largely boiled off.
3. Serve on top of basmati rice. Garnish with fresh chopped coriander if desired.
