Blue Collar Stir Fry

Ingredients
1 medium bag baby carrots1 cup onion chopped1/2 cup green onion or scallion chopped1/4 cup green, red, and yellow bell peppers1 cup snap peas1/2 boneless, skinless chicken breast, cubed1 tbsp each fresh parsley and cilantro1 clove garlic2 tbsp butter1 tsp brown sugar1 tsp worcestershire sauce1 cup water
Directions
Makes 6 servings

Wash and chop all veggies except carrots and snap peas. Combine butter/margarine, worcestershire sauce, water, and brown sugar over medium-high heat in nonstick skillet until thickens. Add chicken and all veggies except peas and fresh herbs. Reduce heat to medium, cover and saute for 20 minutes, flipping or stirring frequently. Add peas and herbs and continue to saute for 5-10 minutes until a glaze forms coating all ingredients. Serve hot with a sprinkling of more fresh parsley. Indulge and enjoy!

    We have tried this 2x now. It was good the 1st time but we made a couple of small changes the 2nd time & we loved it! The second time we added broccoli, cauliflower, and celery with the other veggies. We also used ground chicken instead of chicken breast. It had so many yummy flavors in each bite! - 2/25/11
