~Vegan Fiesta Soup~ *low fat* *high fibre*

Ingredients
* 1 Cup Frozen Corn Kernels (or Canned)* 1 650ml Jar of Medium Chunky Salsa* 1 19oz Can of Enchilada Sauce* 1 28oz Can of Crushed Tomatoes* 1 28oz Can of Stewed Tomatoes, sliced*1 14oz Can of Refried Beans*1 19oz Can of Black Beans, rinsed*1 Pkg Uncle Ben's Tomato & Herb Bistro Rice*1 tbsp Tomato Paste*1 tsp Garlic Powder*1 tsp Onion Powder* Salt & Pepper, to taste
Directions
1. Place all ingredients (except the rice), either in a large pot, or in a slow cooker

2. Cook:
*on stovetop: Medium-Low heat for 45mins, stirring occassionally

*in slow cooker: Set for 6 hours on Low

3. Once your soup is cooked, microwave the rice according to the directions, and stir it into the soup.
