Chinese Chicken Salad

1/3 c. rice vinegar1/4 c. sugar2 Tblsp. honey2 Tblsp. vegetable oil2 Tblsp. soy sauce1/4 c. slivered almonds2 (5 oz.) packages Top Ramen8 c. napa cabbage, shredded2 c. carrots, shredded1c. thinly sliced onion, red1 chicken breast, cooked and thinly sliced1 can Mandarin Oranges
Combine first 5 ingrediants into a small pan. Bring to a boil; cook for 1 minute stirring constantly. Pour mixture into a bowl, cover and chill.
Spray frying pan with cooking spray and over medium high heat saute almonds and crumbled noodles. Cook about 3 minutes tossing occasionally. When toasted put mixture into a bowl, cover and chill.
In a large serving bowl, add cabbage, carrots onion chicken, oranges and noodle mixture. Add dressing just prior to serving and toss.
