Kitchari with Cauliflower and Peas

Ingredients
2 T plus 1 ½ t ghee ½ t minced fresh ginger1 t cumin seeds2 c cauliflower florets½ c basmati rice, rinsed1/3 c split mung beans¾ t turmeric½ c frozen baby peas, defrosted1 t salt
Directions
Heat 2 T ghee in saucepan over med high het. When ghee is hot, stir in ginger and cumin seeds. Fry cumin seeds a few seconds, then add cauliflower and stir fry 4 min, until cauliflower is slightly browned and partially cooked. Stir in rice and beans, and fry one min. Add 3 ½ c water and turmeric and bring to full boil over high heat. Reduce heat to low, partially cover, and cook stirring occasionally, 40 min. Add peas and salt and continue cooking 5 min, until rice and beans are soft. Stir in remaining 1 ½ t ghee just before serving.
