Chicken Salad Spread

Ingredients
1 tablespoon Smart Balance spread2 tablespoons diced celery3 tablespoons diced onion3 ounces less fat cream cheese1 tablespoon finely chopped chives6 ounces diced boneless skinless chicken breast1/2 teaspoon salt, to taste1/4 teaspoon pepper, to taste2 tablespoons chopped cashews1 small piece crystallized ginger, finely chopped (or ground ginger to taste)3 tablespoons crushed pineapple
Directions
Heat a small skillet over medium heat. Add butter. Saute the celery and onion in butter until tender. In a mixing bowl, combine celery, onion, cream cheese and chives until smooth. Stir in chicken, salt, pepper, nuts, ginger, and pineapple. Transfer to a serving bowl. Serve with Triscuits. Makes 1-3/4 cups or 14 servings (2 tablespoons each).
