brown rice pilaif w/ chicken

Ingredients
1 c br.rice 2 c water 1 med zuccini diced 1 5" stalk celery diced 3 rings red pepper diced 2 med size slices of onion diced 1 tb olive oil In a med size sauce pan sautee vegys in oil. set vegies aside in a bowl. In same pan add water and bring to boil add a dash of salt. Add br rice return to a boil. Cover and cook 15 min. Stir well add vegies to mix, cover stir every 10 min til rice is done. Add cooked chicken stir well and continue to heat for 10 min covered. n( this is great for just about any left over chicken. Add seasonings as you like.serves 4-8
