Spanish Frittata

1 lbs red potatoes sliced into thin rounds.4 Tbs. Canola Oil1 Spanish Onion1 Green Bell Pepper2 Turnips, cubed10 EggsSalt and Pepper to taste
Makes 8 wedges
Slice the onion and bell pepper into very thin strings.
Beat Eggs with a SMALL amount of water and salt and pepper to taste. Add Cayenne if you'd like a kick.
Place the oil in the bottom of a Large frying pan or wok. You can use a lot less oil if you spray it or have a non stick pan which will cut the calories on this one!
Preheat the oil on high slightly and add onions and pepper. Cook, stirring until softened slightly (a minute or two). Add Turnips and continue cooking and stirring another 2 minutes.
Preheat Broiler to 500 degrees. Add potatoes and continue to cook while stirring for a minute or so. The objective is to stir until it seems that the ingredients are fairly evenly mixed and spread over the bottom of the pan.
Pour eggs over the ingredients and cook without stirring until the underside is cooked and fairly solid but the top is still slightly runny.
Move pan to broiler for about 5 minutes (or until top is golden and no longer runny).
