Karens Chinese Pepper Steak

1.5 lb steak, sliced thin2 green bell peppers, sliced1 yellow onion, sliced1 can diced tomatoes, drained2 cups water1/4 cup vegetable (canola) oil1/2 tsp ground ginger1 tsp garlic salt1 tbsp sugar2 tbsp corn starch4 tbsp soy sauce1 can sliced water chestnuts1 bag frozen oriental vegetables1 jar baby corn
Heat oil in large skillet. Brown meat. Add onion, water, garlic salt and ginger. Bring mix to a boil, cover and cook for 5 min. Add bell peppers and frozen veggies, cover and cook 7 min or til tender. Add tomatoes, water chestnuts and baby corn.
combine sugar, corn starch and soy sauce in a bowl and whisk together. Add to skillet and bring to a boil uncovered until sauce thickens.
Serve over rice. Makes about 7 - 1 cup servings
