- 1 frozen pie crust- 3 large eggs- ¼ cup splenda- 2 cups Pevely 1% cottage cheese- 1 teaspoon vanilla- Freshly ground nutmeg- Cinnamon (optional)- Fresh berries OR sugar free jam
Whisk splenda and eggs together until smooth. Gently whisk in cottage cheese and vanilla, then pour into frozen crust. Grate nutmeg directly over top of filling as evenly as possible. Bake for 60 minutes in preheated 350 oven or until filling is slightly puffed and golden and lightly set. Cool for an hour.
Serve with fresh berries, or sugar free jam.

this is really good like a light cheesecake except I used only the eggs whites and a little (1/8th of a tsp) of lemon extract, and left out the cinnamon and nutmeg, although next time I think I'll use some rum extract and cinnamon and nutmeg for a eggnog flavor, very yummy, high in protein. - 11/4/10
