Protein Granola Bar

2.5 cups oats3 scoops vanilla protein powder2.5 tbs flax meal1/4 cup honey4 oz unsweetened applesauce1/3 cup brown sugar1 tsp baking soda1 tsp vanilla extract2 oz almonds, chopped1/4 cup dried fruit, chopped3/4 cup shredded coconut
Mix the oats, protein powder, flax meal, honey, applesauce, brown sugar, baking soda, and vanilla extract in a bowl. Mix in the remaining ingredients. Spray a cookie sheet with non-stick spray and press the mixture into the cookie sheet. Bake at 325F for 18-20 minutes. Let cool completely and cut into 12 bars.

I added 2 tablespoons of low fat margarine to this receipe to make it stick together. I put it into a jelly roll pan and baked it the required time and drizzled confectioners sugar mixed with a little water on top and cut it into 24 bars. I estimate the calories at 120 for each bar. - 8/19/11
