Orange Beef Stir-Fry

Ingredients
2 T. cornstarch, divided2 tsp. + 2 T. sugar, divided4 T. soy sauce, divided1 egg white1 lb beef flank steak, cut into thin slices 1/4 cup water1/4 cup OJ concentrate1 T. ketchup1 tsp. grated orange peel1/2 tsp. hoisin sauce1 T. canola oilhot cooked rice
Directions
In a large bowl, combine 1 T. cornstarch and 2 tsp. sugar. Stir in 2 T. soy sauce until smooth. Add egg white and beat until blended. Add beef and toss to coat. Let stand for 5 minutes.

In a small bowl, combine remaining 1 T. cornstarch with water until smooth. Add the OJ concentrate, ketchup, orange peel, hoisin sauce and remaining 2 T. sugar and 2 T. soy sauce; set aside.

In a large skillet, stir-fry beef mixture in hot oil for 2-4 minutes or until meat is no longer pink. Stir OJ mixture and stir into skillet. Bring to a boil; cook and stir for 2 minutes or until thickened. Serve with rice.
