Cream Puffs

Ingredients
1 C boiling water½ C butter/margarine¼ t salt1 C all-purpose flour4 eggsWhipped cream
Directions
Preheat oven to 425 F
Combine water, butter, and salt in medium sauce pan. Stir to melt butter. Bring to a boil
Add flour all at once. Stir vigorously until it forms a ball and pulls away from the sides of the pan.
Remove from heat.
Add eggs one at a time, beating thoroughly after each.
Drop by spoonfuls onto a greased baking sheet, leaving room for expansion
Bake for 30 mins. Should look dry with no beads of moisture showing
Cool on rack. When cool, cut top almost off, fill with whipped cream.

Makes 12 large puffs or 24 small puffs.

Variations: Drizzle with caramel, chocolate, or butterscotch sauce
Could also fill with tuna, ham or egg salad
