Blueberry Bumble Crumble Bars

1 C. Organic Cane Sugar1 t. Baking Powder2 C. Whole Wheat Flour1 C. White Flour3/4 C. Vegan Margarine, cold1/2 C. Liquid Egg Whites4 C. Blueberries, 1/2 C. Organic cane sugar4 t. Cornstarch1 T. Lemon juice
1. Preheat oven to 375. Grease a 9x13 pan.
2. Combine flour, baking powder and 1 cup sugar. Using a fork , blend in the butter and egg. Dough will be crumbly. Pat half of the dough into pan, pressing firmly. Reserve the other half for the top.
3. In a separate bowl, combine the remaining sugar, cornstarch and lemon juice. Gently mix in the blueberries. Sprinkle the blueberry mixture over the crust in the pan.
4. Top with the remaining reserved crust mixture.
5. Bake for 55 minutes, or until top is slightly browned. Cool completely, cut into squares.
