Ham and Swiss Rosti

Ingredients
1 large egg1 cup diced ham2 cup shredded swiss cheese1 onion - chopped1 tsp rosemary1/2 tsp pepper1/4 tsp salt4 cups frozen hash brown potatoes (shredded)2 tbs olive oil
Directions
1. Beat egg in large bowl. Stir in ham, 1 cup cheese, onion, rosemary, pepper and salt. Add frozen potatoes and stir all
2. Heat 1 TBS oil in large nonstick skillet over medium heat. Pat the potato mixture in an even round in the pan. Cover and cook until browned and crispy on the bottom - 4 to 6 min
3. Remove the pan from heat. Losen rim and bottom of mixture. Place a rimless baking sheet on top of skillet, turn over. Wipe oput any remains, add 1 TBS oil. Slide mixture from cookie sheet back to pan. Top with remaining 1 cup cheese. cover and cook until crispy and browned.

Slice and serve as wedges.
