Tangy Apricot-Glazed Pork

Ingredients
1/4 cup Polaners Apricot All Fruit Spread1/4 cup honey mustard2 lbs pork tenderloins (2-1 lb pieces)1/4 tsp salt1/4 tsp fresh ground black pepper
Directions
1. Heat oven to 400

2. Mix the fruit spread and the mustard in a small bowl.

3. Rub pork with the salt and pepper.

4. Roast pork for about 8 minutes, then turn and brush the top with half of the glaze.

5. Roast for another 8 minutes then turn and glaze the top with the rest of the mixture.

6. Pork is done when the meat thermometer reads 160, or after about 25 total minutes.

7. Cover meat loosely with aluminum foil and allow to rest for 5 minutes before cutting.
