GT Express Veggie Pockets with Shredded Cheese

Ingredients
Fajita Size flour tortilla1/4 cup zucchini1/4 cup red or green pepper3 leaves fresh spinach1/4 cup chopped onion1 tbsp chopped cilantro1/2 tablespoon Bob's red Mill Wheat Germ1/3rd cup shredded colby jack cheese
Directions
Chop all your vegetables and mix into a big bowl -- add wheat germ and season with pepper if you like.

Heat the wells on the GT express and add your tortillas -- pile the veggie mixture onto the tortilla, fold over, and let cook until the tortilla is slightly browned and the pocket is solid.

Great for pack-ahead lunches!
