Herbs de Provence Balsamic Vinegarette

- 3/4 c. balsamic vinegar (try to get a decent to good one that's at least 10 yrs. old)-1/4 c. red wine vinegar-3 tsp. Dijon mustard-1 Tb. honey (or a little more is you want it sweeter)-2 tsp. salt (optional)-1 1/2 Tb. lemon juice (about 1 lemon)-1 tsp. fresh rosemary, chopped-1 tsp, fresh thyme-1/2-1 tsp. lavender blooms 9dried or fresh)-1/4 c. plus 2 TB. extra virgin olive oil
Makes 1 pint (16 servings at 2 Tb. each).
Put all ingredients,except olive oil, into a small mixing bowl. Whisk until honey and mustard are emulsified. While whisking, drizzle olive oil into mixture. Store in refrigerator. Shake before each use as there will be some separation.
