Yummy Banana/Blueberry Bread

Ingredients

1-1/2 C unbleached all purpose flour1/3 c sugar1/3 c honey2-1/4 double acting baking powder1/4 tsp salt1 tsp grated lemon rind1 large egg1/3 C Canola Oil3/4 c mashed banana's1/2 c blueberries (frozen or fresh)
Sift together flour, baking powder & salt in small bowl.
Cream Oil, sugar & honey. Beat egg and beat with liquids. Beat in Fruit and lemon.
mix 1/3 of dry ingrediants at a time to make sure it is well mixed. Bake 60 minutes @ 350 or until toothpick comes out clean.
Preheat oven to 350 degrees F (180 degrees C) and place oven rack to middle position. Butter (or spray with a non stick vegetable spray) the bottom and sides of a 9 x 5 x 3 inch (23 x 13 x 8 cm) loaf pan
I like to cover the top with a tbsp of brown sugar (opt)
