Power pancake

Ingredients
Three egg whites1/2 C dry oatmeal4 packets of Splenda1/4 C fat free plain yogurt1/4 tsp. vanilla flavoring (optional)1/4 C blueberries (may substitute sliced banana or strawberries)
Directions
Whip three egg whites with 2 packets Splenda until whites are frothy. Stir in dry oatmeal and mix throughly. Spray skillet with non-stick spray and pour mixture in pan. Cook on medium heat approx. 2 minutes per side.

While pancake is cooking, mix remaining 2 packets of Splenda in to the yogurt along with 1/4 tsp. vanilla.

Place cooked pancake on plate and spread with yogurt and sprinkle blueberries on top.
