Pumkin Cookies

Ingredients
1/2 cup unsweetened applesauce1 cup splenda2 egg whites 1/4 cup Log Cabin Sugar Free Syrup1 tsp. Vanilla Extract1 cup canned pumpkin puree (or fresh cooked and mashed)2 cups all-purpose flour 4 tsp baking powder1/2 tsp salt1/2 tsp cinnamon1/2 tsp nutmeg1/4 tsp cloves1/4 tsp ginger
Directions
Preheat oven to 365 degrees farenheit
Mix together applesauce, sugar, eggs, vanilla extract, syrup and pumpkin puree. Sift together all dry ingredients. Add dry ingredients to pumpkin mixture. Drop by tablespoon full onto a lightly greased cookie sheet. Bake for about 10-12 minutes or until bottom of cookie is light brown.
Makes aprox. 45 cookies.
