Broccoli Rabe with Bulgur and Walnuts

1 cup bulgur, 1 bunch broccoli rabe, 6 tablespoons extra virgin olive oil, 2 large shallots minced, 2/3 cup chopped walnuts, 2 tbls lemon juice, 1/2 cup parmesan cheese
cook bulgur according to package directions, cook broccoli rabe and cool in ice water, cut broccoli rabe into approx 2 inch pieces, heat oil over medium heat and saute shallots about 2 mins, add walnuts and saute 2 mins, add broccoli rabe and bulgur, sprinkle with salt & pepper, cook about 3 mins, stir in lemon juice, toss in parmesan. Makes 8 1-cup servings
