Ingredients
3lbs. Chuck Roast2 C. Tomato Sauce2 links Chorizo sausage, sliced1 large green bell pepper, chopped2 small yellow onions, chopped4 cloves garlic, chopped fine or pressed1 Tbsp. Olive oil4 bay leaves, whole
Directions
Cook roast in slow cooker until it can be easily shredded (about 6-8 hours depending on your cooker). Shred the meat and put back in the cooker (do not drain). Add tomato sauce, chorizo, and bay leaves. Saute the bell pepper, onions, and garlic in the olive oil until softened. Add to the cooker. Stir, then allow to cook for another couple hours (the longer it cooks, the better it tastes). Salt and pepper to taste. Serve over rice.
