1 cup chopped, cooked chicken1/4 EACH OF THE FOLLOWING:grated raw carrotfinely minced red onionfinely chopped raw celeryfinely chopped apple(Fuji or other medium sweet apple)rough chopped walnuts3-4 Tablespoons of low fat mayoMrs. Dash and pepper to taste
Directions
Roast and debone a whole chicken, buy a rotessieri chicken at the market, or oven roast 2 chicken breasts.
Makes a lovely brunch served on lettuce leaves, serves 5 to 6.
