Dwan's Slow Cooker BBQ

1 (2.5 lbs) eye of round roast2 cups chopped onion1 (12-oz) diet coke1/3 cup worcestershire sauce1 1/2 tbsp apple cider vinegar1 1/2 tsp beef bouillon granules3/4 tsp dry mustard3/4 tsp chili powder1/4 to 1/2 tsp ground red pepper2 tbsp minced garlic1 cup ketchup
Trim any fat from the roast. Place roast in a 4 qt electric slow cooker; top with chopped onions. Combine the diet coke and next 7 ingredients; stir well. Reserve 1 cup of cola mixture to make a sauce for the BBQ; cover and chill. Pour remaining mixture over roast (it will seem like it is not enough but it really is plenty).
Cover with a lid and cook on high for 1 hour then on low heat setting for 9 hours (I like to cook mine over night) or until roast is very tender. Remove roast and chopped onions from the cooker and discard all other meat juices. Shred meat with two forks (or if tender enough you may be able to shred it with your fingers). Combine shredded meat and onions; toss well.
Combine reserved diet coke mixture with 1 cup of ketchup and heat of medium heat. Cook until throroughly heated, stirring constantly. Pour sauce ove shredded meat and toss gently.
May serve with a bun or eat as is. Note, nutritional information does not include the bun.
