Irish Soda Bread

Ingredients
4 cups flour 1/3 cup sugar1 tsp soda 1 tsp salt1 1/3 cup buttermilk1/3 cup canola oil2 eggs lightly beaten
Directions
Set oven to 350 line baking sheet with parchment paper or grease
In a large bowl combine flour sugar soda and salt mix until just blended with a wooden spoon
Add buttermilk oil and eggs stir until batter is moist
fold in rasins batter will be sticky turn onto lightly floured surface knead until smooth(sprinkle with flour if to sticky) divide in half form each half into a 6 inch round slightly mounded in center cut a 3/4 inch X in top of each round set loaves on baking sheet bake on center rack for approx 45 min or until golden brown and sound hollow when tapped cool slightly on wire rack makes 20 servings
