SM Chicken with Thia Peanut Sauce

Ingredients
3 pound boneless skinless chicken thighs2 cups chicken broth1/3 cup peanut butter1/4 cup soy sauce1 T fresh lime juice1/2 cup coconut milk ( I buy the small cans)1 teaspoon red chili with garlic (in asian section)1 teaspoon sesame oil
Directions
Brown chicken in a nonstick skillet, add 2 cups chicken broth, cover, lower heat to low, and simmer until pieces are tender and fall apart when pressed with spoon and liquid is nearly evaporated, about 35 minutes (or longer). Fold in peanut sauce, and serve, hot or cold.

Combine all ingredients a small saucepan and whisk in enough water to bring to a smooth consistency, about 1/4 cup. Cook over medium heat until sauce begins to bubble and thicken. Serve hot or cold.

If you cant find the little cans of coconut milk, use what you need and then use the rest in the chicken marinade.

    This was SO incredibly yummy! All the flavors combine to form such a full bodied, rich flavored dish w the teensiest taste of heat. I did brown my chicken in butter. No missing out on flavor, feeling deprived or being reminded you're on a diet w this dish! - 9/14/13
