Quinoa & Turkey Casserole

Ingredients

1 large onions, diced 1 tbsp Extra Virgin Olive Oil5-6 medium mushrooms, sliced thim3 cloves garlic, minced3-4 medium red potato, cleaned and sliced1 lbs ground turkey1 1/2 cups chicken broth1 cup quinoa, rinsed1 1/2 tsp poultry seasoning 6 ox reduced fat monteray jack cheese,shredded
Preheat oven to 350
Saute' onions in large skillet in evoo until translucent
Add mushrooms, potatoes, and garlic. cook 2-3 minutes
add turkey - breaking into small pieces as it browns approx 4 minutes
Add poultry seasoning, broth, quinoa (and salt/pepper if desired) bring to boil
Reduce heat to low and cover. Simmer 10 minutes
Stir in 3 oz of cheese
Transfer mixture to 9x9 casserole dish/baking pan
top with remaining cheese
Bake 30-35 minutes
