Chicken, Peppers, Onions and Tomatoes

Ingredients
1/4 cup Chicken broth2 chicken breasts, cooked and cubed2 green bell peppers, diced on the bigger side2 yellow onions, dicedon the bigger side1 t sea salt1 t black pepper1/2 t dried oregano6 t dried basil4 garlic cloves, minced2 Tbsp tomato paste1 cup Marsala wine1 (28oz) can whole tomatoes
Directions
In a large pan or electric fry pan, cook onions and garlic in chicken broth until onions are tender/transparent. Add remaining ingredients, but cut up the tomatoes and add the juice from the can. Simmer for 20 minutes and serve. You can also put this in a slow cooker.

    I really like this. I used turkey because that is what I had. very good. I think you must have meant more than 4 oz breasts. It really would only serve 6 the way mine turned out. - 9/28/09

    At this very minute it's simmering...I tried a taste and it's yummy! I didn't use any salt and I substituted fresh tomatoes for canned and used extra broth instead of wine. Very easy too make! I'm serving it over brown rice. - 7/7/09
