Maifun noodles and vegetables

Ingredients
1 package maifun noodles, soaked in hot water for 15 minutes.5 cup matchstick carrots2 cups broccoli florets2 cups shredded Napa Cabbage1 small can water chestnuts1 Tbsp soy sauce1 can vegetable broth1 Tbsp olive oil1 tsp cayenne peppersalt and pepper
Directions
While soaking the noodles, heat the olive oil and add the vegetables to a wok. Cook the vegetables until soft, adding some broth as needed. Add salt. pepper and cayenne to taste.

Drain the water from the noodles and add them to the cooked vegetables with the soy sauce and remaining broth. Heat through and serve. Makes 6 servings.
