Ingredients
2cups Black-Eyed Beans(Chavali/Lobia/Rongi)soaked overnight3medium ripe Tomatoes chopped1.5tsps.Turmeric Powder3tsps.Red Chilli Powder2tsps.Coriander--Cumin Powder3tsps.Goda Masala(any one recipe)1.5"lump of Jaggery OR1.5tsps.Brown Cane SugarSalt to tasteSEASONING2tbsps.Sesame Oil2.5tsps.Black Mustard Seeds1.5tsps.Cumin Seeds7-8 Sweet Curry Leaves5 whole Dry Red Chillies2tsps.Asafoetida(Hing)Powder
Directions
Pressure cook the soaked Beans with sufficient Water for 3-4 whistles.Heat Oil in Wok and add the Black Mustard seeds,Cumin Seeds,Turmeric Powder,Sweet Curry Leaves,Dry Red Chillies and asafoetida(Hing)Powder in the order given and lower flame.When the Seasoning sputters add the chopped tomatoes and fry till soft and pulpy.Now add the Coriander--Cumin Powder and the Goda Masala Powder and fry for 2-3 minutes.Add the Red Chilli Powder,Jaggery and Salt to taste and cook for a minute more.Add the cooked Beans and the cooking liquid.Stir well and cover and cook for 6-7 minutes allowing the Beans to absorb the flavours.Adjust the thickness of the gravy to suit personal taste.serve hot garnished with chopped fresh Coriander(Cilantro)Leaves
