Ham and Cheese Noodle Casserole with Peas

Ingredients
2 tbsp olive oil1 (10-ounce) package frozen peas2 tablespoons cornstarch3 cups dry egg noodles 1 1/2 cups 1% milk 4 ounces lean ham 1/2 cup Cheddar cheese, shredded 1 ounce hard pretzels
Directions
1. Preheat oven to 400 and spray a 2 quart baking dish with cooking spray.
2. Cook egg noodles according to package directiosn, drain, and toss in olive oil to keep them from sticking.
4. Stir milk and cornstarch together in a large cup; whisk into saucepan with onion and cook, whisking, until boiling. Whisk in half and half and continue to cook, whisking, until thickened, about 2 minutes.
5. Stir noodles, peas, and ham into saucepan. Add pepper (optional) and scrape into baking dish. Sprinkle pretzels and Cheddar on top and bake until golden and bubbly on top, about 20 minutes.

Servings: This makes 2 large servings as a one-dish meal, with no sides, or 4 small servings if served with other dishes.
